Healthy Ragi Uttapam | Nutritious South Indian Breakfast

Ingredients :
For making batter :
- 1 cup Ragi
- ½ cup Rice
- ½ cup Urad Dal
- ¼ cup Thick Poha
- 1 tsp Methi seeds
- Salt to taste
- Oil for cooking

For the topping :
- 2 medium sized finely chopped Onion
- 1 medium sized finely chopped Tomato
- 5-6 finely chopped Green Chillies
- 1 medium sized Grated Carrot
- 1 medium sized Capsicum chopped lengthwise
- Finely chopped Fresh Coriander

Step By Step Method Of Making Healthy Ragi Uttapam | Nutritious South Indian Breakfast
For making batter
- Wash ragi,rice,urad dal & methi seeds nicely with water.
- Soak them together for 7-8 hours.
- Once nicely soaked grind them together.
- While grinding add soaked poha or flattened rice .
- Grind to a fine paste.
- Add water as required.
- The consistency of the batter should be thick like that we need for dosa batter.
- Now keep this grinded batter for 8-10 hours for fermentation.
- Once nicely fermented add salt to the fermented batter.
For the topping
- Chop onion,tomato and green chillies finely.
- Grate the carrots.
- Cut the capsicum lengthwise.
- Chop fresh coriander.
- In a bowl,mix the chopped onions,tomatoes,green chilies,coriander leaves,grated carrot,capsicum and a pinch of salt.
- Keep it aside.
Making the Uttapam :
- Heat a non-stick tawa (griddle) or a large flat pan over medium heat. Grease it lightly with oil.
- Pour a ladleful of batter onto the tawa and spread it gently to form a thick pancake.The uttapam should be around 1/4 inch thick.
- Sprinkle a portion of the prepared vegetable topping mixture evenly over the batter.
- Press the toppings gently with a spatula so they stick to the batter.
- Drizzle a little oil around the edges of the uttapam.
- Cook on medium heat until the bottom side turns golden brown and crisp.This should take about 2-3 minutes.
- Carefully flip the uttapam and cook the other side for another 2 minutes until the toppings are cooked and the uttapam is golden brown.
- Serve the ragi uttapam hot with coconut chutney,sambar,or any chutney of your choice.
